Assassin’s Creed Nexus VR: get the controls right first
Before chasing timed challenges, I'd spend a few minutes getting the movement comfortable. That's more useful here than pretending every Assassin's Creed needs the same skill-build guide.
Nexus supports seated play, with reach distances adjusted for it. Teleport movement can be combined with that, and Climb Teleport lets you select the next climbing position instead of physically pulling yourself through every movement.
Holster Assist helps select weapons without reaching over your shoulders. Auto-Parkour reduces the need to keep holding movement controls. If heights are the problem, there are ground-reference/grid options and a reduced-view effect for falls and Leaps of Faith. Dynamic vignettes are another adjustable comfort option.
I'd change one setting, try a short route, and see whether it actually helps before changing everything else. Get comfortable with the movement you're going to use, then start worrying about clean stealth runs or speed challenges.

Nexus VR — collecting without starting everything over
For Nexus, I'd handle the side objectives inside each memory instead of treating it like one enormous open-world map.
Start with the area's synchronization point. The miniature city view helps reveal the optional objectives, so check that before wandering around hunting blindly. Then work through the challenges and collectibles before moving on.
If something gets missed, previous levels can be replayed. That makes a cleanup pass much more sensible than restarting the whole game because one city isn't finished.
Keep the achievement checklist beside it: fragments, historical locations, rifts and challenge medals are separate objectives. Finishing the story isn't the same as clearing those.
