Assassin's Creed Valhalla is right there with Origins and Odyssey for me. These are some of my favorite games in the entire series, and they're the ones I put a lot of time into and got really absorbed in.
Valhalla gives you Eivor, the Raven Clan, and this huge journey from Norway into England. You're trying to build a home while getting involved with the people, rivalries, and political struggles around it. There's a lot more going on than just moving from one target to the next.
The settlement is a big part of how the game is put together. Ravensthorpe gives you somewhere to come back to while the alliances take you through different parts of England. Each area has its own people and its own problems, so the larger story is built out of all these smaller stories along the way.
Then you have the Hidden Ones, the Order of the Ancients, and the deeper connections to the Isu. The game brings those things together with its Norse mythology, and there is a lot to unpack once you start putting all of it together.
And this game has a ridiculous amount of material beyond that main journey. Wrath of the Druids takes you to Ireland. The Siege of Paris takes you into Francia. Dawn of Ragnarök goes much further into the mythological side. They're different experiences, and they give us plenty to talk about without treating the whole game like one quick paragraph.
This is one of the games I want to go deeper on. There's the story, the expansions, the equipment, the abilities, the things to find, and the choices that actually change parts of the outcome. A lot of my favorite time with Assassin's Creed is in these three games.
