There are two bigger choices to settle before you finish laying everything out: bakery or butcher, and stables or guardhouse. These are alternatives. You cannot eventually squeeze both versions into the village, so make a save before committing if you want the option to reconsider.
The bakery needs grain and can add a drying shed. The butcher uses livestock and can add a smokehouse. Both can contribute to a profitable settlement. Look at the services you want and the rest of your businesses, rather than choosing entirely from one base-income number. The bakery's connections with beehives and the tavern are worth factoring in.
For the second pair, the stables give you access to their horses and, with the saddler upgrade, more horse equipment. They also help the trader through their supply of horses. They require the forge and grain.
The guardhouse requires the forge, tavern, and grain. Its combat arena gives you somewhere to practice, and you can add an archery range. The guards also provide customers for the tavern. You do not need to rush this building because you are expecting a settlement-defense sequence against waves of bandits. That is not what this DLC is doing.
I would choose between those two based on whether I wanted the horses and stable services or the training facilities. Either can belong in a successful village. Just read the prerequisites before setting aside money for something you cannot build yet.
